working within the heart of the hotel, this was a major kitchen re-build. Splitting the existing hotel’s kitchens and configuring a large Chinese production kitchen for the new 200+ seat restaurant together with a large front of house “show” kitchen. Resolution of equipment & services design; authority approvals and project coordination this project was completed within the fixed budget and timeframe to bring a successful new outlet into the venue.
