“Raw / pickled / fermented / smoked and wood fired” – a dining experience that drove an interior concept of comforting warmth. The restaurant interior divides into zones, providing an intimacy expressed by the palette of dark timbers, burgundy metalwork and heavy velvet drapery. Wine displays line the walls & racks of wood for the bespoke oven tell the story of the offer. The touchpoints and materials convey a sense of quality which is reassured by the staff’s professionalism.

Tiina and Carlton are experienced restaurateurs with a clear vision for creating culinary environments which become much-loved. Rufus has proven their approach once again having quickly become a “regular” for Cairns.
